If you haven’t noticed already, we’re dedicated to focusing all our precious energy on making two products the absolute best they can be. The best burgers and the best lobsters. Simple.

When it comes to our drinks, our philosophy is the same. Great producers make great drinks. This is why, when it came to choosing a partner to collaborate with this season, there was only ever one choice: Enter, WhistlePig Whiskey.

Founded in 2008, WhistlePig is now the most awarded Rye Whiskey maker in the world and so too probably the Universe. They live by a simple ethos: protect what makes Rye Whiskey great, toss out the rest, and then innovate to make it better. Makes perfect sense when you think about it.

And the result is a knock-your-socks-off 10-year Rye Whiskey. Lovingly guided through a double barrel ageing process, Whistlepig’s 10-year Rye Whiskey has received the highest EVER rating for a Rye Whiskey. And we bet, once you’ve tasted this golden liquor, experienced its sweet hints of caramel, smoky vanilla, rye-spice and mint, you’ll understand why.

But on to the important questions, what does such a partnership mean for you? Well, firstly, in each of our London bars, WhistlePig 10-year Whiskey will be available. Hooray!

An advocate of on the rocks? Well, then you can look forward to an “assertive and complex flavour devoid of the sweetness of corn.” Prepare for allspice, orange peel and oak on the nose, and a warming butterscotch finish. We know, tempting isn’t it?

And for those who tend to favour their tipples longer? We’d recommend a Monte Carlo - the one with Benedictine and Orange Bitters - or better still, opt for our classic cocktail of choice this winter: The Maple Old Fashioned.

A drink that defined a generation; dubbed the ‘original cocktail’, the Old Fashioned has lived through many variations, from its humble beginnings in the 1800’s to the cocktail’s revival in the 2000s. Eighteen years on, twinning WhistlePig’s 10-year Rye Whiskey with barrel-aged organic maple syrup made on the same Vermont farm, we think our take on the Old Fashioned is pretty top notch!

Taking WhistlePig’s 10-year and maple syrup, and barrel ageing on-site to make sure that the two key ingredients are perfectly combined, we serve ours simply; over ice with a couple of dashes of bitters and a zest of orange peel to finish.
